Esta sopa es una adaptación a una que comiamos muy seguido en un restaurante Chino llamado 838 en Maracaibo la única diferencia es que en vez de hojas de mostaza ellos le colocaban hojas de lechuga criolla.

- 1 kilo Huesos de pollo
- 500 grs pechugas de pollo en cubos chicos
- 2 paquetes Pasta de Arroz
- 1 manojo hojas de Mostaza
- 3 dientes Ajo
- 50 grs Soya seca
- Salsa de Marinado Chino
- Aceite de ajonjolí
- Sal y pimienta
- Cilantro en Polvo o seco
- 2 litros agua
- 1 cucharada maicena
- Paprika
- 1 litros agua para la pasta
- al gusto Aceite de Oliva
- Curry

- Coloca los huesos del pollo(kai) en el agua (2 litros) y dejar hervir por mucho tiempo ⏳
- Pasada 1 hora y 30 min o más Coloca la soja previamente hidratada, sal, pimienta al caldo
- En un wok bien caliente agregar aceite de Oliva y los 3 dientes de ajo cortados en ruedas
- Dejarlos dorar mucho y luego retirar los Ajos del Wok
- El Pollo o kai(chino) aliñarlo con Aceite de sésamo, salsa China o aderezo Chino, sal, pimienta y un toque de paprika y curry.
- En el Wok con el aceite que teníamos colocar el Kai de a poco para que siempre el wok esté muy caliente, eso ayuda a que esté jugoso por dentro y dorado por fuera.
- Con el Pollo pasado unos 4 min colocar 100 ml de agua y colocar dentro del Wok las hojas de mostaza previamente limpias (revisar bien, a veces trae arena).
- Tapar el wok y dejar cocinar por 3 minutos y cuando esté transparente el tallo es que ya está listo, luego retirar las hojas de mostaza y reservar para el emplatado.
- Ya cuando hayas sacado las hojas coloca salsa de soja y en 20ml de agua diluye 1 cucharada de maicena. Y agraga al Kai.
- Mezclarlo y esperar a que tome cuerpo la salsa. Como unos 3 minutos aproximadamente
- Aparte en una olla, cocinar por 5 min en agua hirviendo la pasta, (esta vez hice 2 paquetes) Y escurrir, colocar un poco de agua fría para evitar que se pegue y se siga cocinando.
- Como el caldo sigue hirviendo ya debe estar aún mejor, ahh los Ajos dorados no los bote, sólo los coloque al caldo.
- Emplatado: Coloca la pasta en el fondo luego el pollo y por último las hojas de mostaza y del caldo colocar trozos de Soja, y termina colocando de la sopa sólo el caldo. Por último para resaltar los sabores agraga media cucharadita de aceite de sésamo y si deseas salsa de soja y Listo.
